- Panko¾ tazas
- Parmesan cheese · grated½ tazas
- Parsley · finely chopped⅓ tazas
- Olive oil4 cdas.
- Pine nut2 cdas.
- Onion · diced1
- Garlic · minced4
- Generous pinch of sea salt & pepper
- Red wine⅔ tazas
- Whole crushed tomatoes in can56 oz
- Zucchini · sliced6
- The Fit Cook Land seasonings2 cdas.
Preparación
- Cut the top sirloin into 6 thin slices. Place each between two sheets of parchment and gently pound until thin, taking care not to make holes.
- Mix the stuffing ingredients in a bowl. Spoon 1 to 2 tablespoons into the middle of each beef slice, fold in the sides, roll up, and tie each roll with butcher's twine. Set aside.
- Heat a heavy pot on medium-high. Add the 2 tablespoons olive oil, then the beef rolls. Sear for 2 to 3 minutes per side, on at least 2 sides, until browned marks appear. Remove with tongs and set aside.
- Lower the heat to medium. Add the garlic and onion, stirring at once so they do not burn. Cook 3 more minutes, adding a pinch of salt as they cook.
- When the onion has softened, pour in the red wine and reduce it by half. Scrape the bottom of the pot with a wooden spatula to lift the browned bits.
- Add the crushed whole tomatoes. Lower to a gentle simmer, cover, and cook at least 20 minutes, until the tomatoes are soft and can be crushed into a paste with the spatula.
- After 20 minutes, crush the tomatoes in the pot with the spatula to thicken the sauce. Nestle the beef rolls into the sauce, partly cover, and cook at least 30 more minutes.
