Lebanese Style Ful Medamas
Ingredients
- Fava bean4 x 400 g
- Chickpea2 x 400 g
- Cumin1 tsp
- Garlic · crushed2 cloves
- Salt2 tsp
- Extra virgin olive oil¼ cups
- Lemon
Instructions
- Drain and rinse the fava beans and chickpeas.
- Put them in a large saucepan with the cumin and just enough water to cover. Bring to a boil over medium heat.
- Once boiling, remove from the heat. Drain into a bowl, keeping at least 1 to 1½ cups of the cooking liquid.
- Roughly mash the beans with a spoon or pestle. Add the garlic, salt, olive oil and juice of 1½ lemons, adjusting to taste.
- Mix well. Note that the longer it stands, the more liquid it absorbs and the drier it gets.
- Serve in bowls topped with chopped mint, parsley, spring onions, tomatoes and radish, with a generous drizzle of olive oil.
