Leftover pasta al forno
Ingredients
- Pasta
- Butter40 g
- Flour40 g
- Milk500 ml
- Nutmeg
- Salt
- White pepper
- Grana padano hard cheese
Instructions
- Defrost the leftover pasta in the microwave for about 5 minutes, until loosened and easy to mix.
- Melt 40 g butter in a saucepan, stir in 40 g flour and cook for 1 minute.
- Gradually whisk in 500 ml cold milk, a little at a time, whisking until smooth after each addition; the sauce will look too thick at first, so keep adding milk slowly until it is silky and velvety.
- Off the heat, stir in a pinch of nutmeg, salt and white pepper.
- Mix the pasta with some of the béchamel and spoon it into a buttered baking dish.
- Mix again, then top with more béchamel and grated Parmigiano or grana cheese.
- Bake covered at 190°C for 20 minutes, then uncover and bake another 10 minutes until golden and bubbling.
