Lemon Bars With Shortbread Crust
Ingredients
- Butter · melted1 cup
- Sugar2 ½ cups
- Vanilla2 tsp
- Salt½ tsp
- Flour2 cups + 2 tbsp + 6 tbsp
- Egg6
- Lemon1 cup + 2 tsp
Instructions
- Preheat the oven to 163°C (325°F). Line the bottom and sides of a 9×13-inch glass pan with parchment, leaving overhangs to lift the bars out later.
- Mix the melted butter, 1/2 cup sugar, vanilla and salt in a bowl. Add 265g flour and stir until fully combined; the dough will be thick.
- Press the dough firmly and evenly into the pan.
- Bake the crust for 20-22 minutes, until the edges are lightly browned.
- Remove the crust from the oven. While it is still warm, poke holes all over the top with a fork, without piercing through.
- Sift together 2 cups sugar and 46g flour. Whisk in the eggs, then the lemon juice and the lemon zest if using, until fully combined.
- Pour the filling over the warm crust.
- Bake for 22-26 minutes, until the centre is relatively set and no longer jiggles.
- Cool completely at room temperature, then chill until firm.
- Lift the bars out with the parchment, dust with confectioners' sugar, and cut into squares, wiping the knife clean between cuts.
