Lemon Cheesecake

Ingredients

Instructions

  1. Set the oven rack to the lower-middle position and preheat to 350°F (177°C).
  2. Grind the graham crackers to fine crumbs if starting from full sheets. Stir in the 1/4 cup sugar, then the melted butter; the mix will be sandy.
  3. Press firmly into the bottom and slightly up the sides of an ungreased 9-inch springform pan, packing until no crumbly bits remain. Pre-bake for 10 minutes, then set the hot pan on a large sheet of foil for the water bath and let the crust cool slightly.
  4. Put the 1 1/4 cups sugar and lemon zest in a food processor or blender and pulse about 10-12 times until blended and the zest is slightly broken down.
  5. Beat the cream cheese with the sugar mixture on medium-high speed with a paddle until smooth and creamy, about 2 minutes. Add lemon juice, sour cream and vanilla and beat until fully combined.
  6. On medium speed, add the eggs one at a time, mixing only until each is blended. Stop mixing once the last egg is in, to avoid cracks.
  7. Pour the batter into the warm crust and smooth into an even layer.
  8. Boil enough water for 1 inch in the roasting pan. Set the springform pan inside the larger roasting pan, pour in the hot water, and place in the oven.
  9. Bake 55–70 minutes, tenting with foil halfway if the top browns too fast, until the center is almost set and only slightly wobbles when the pan is tapped. Turn off the oven, open the door slightly, and leave the cheesecake in the water bath for 1 hour.
  10. Take the cheesecake out of the water bath and let it cool completely, uncovered, at room temperature.
  11. Spread about 3/4 cup lemon curd over the top, stopping short of the edge, once fully cooled.
  12. Refrigerate at least 4 hours or overnight.
  13. Loosen the edge with a knife and remove the springform rim. Slice with a clean knife, wiping and dipping it in warm water between cuts. Store leftovers refrigerated up to 5 days.
