Lemon chicken strips
Ingredients
- Chicken breast1.1 lb
- Lemon6 tbsp + 2
- Rosemary3 sprigs
- Extra virgin olive oilto taste
- Saltto taste
- Butter3 tbsp
- Flour
- Water ½ · cup
- Garlic1 clove
Instructions
- Cut the chicken breast into strips, removing any fatty parts. Finely grate the lemon zest, then squeeze and strain the juice.
- Heat the olive oil in a skillet and infuse it with the garlic. When hot, remove the garlic and add the chicken strips.
- Sear the chicken over high heat, stirring often, and add the rosemary needles. When well browned, set the chicken aside.
- Lower the heat. In the same skillet, melt the butter, add the flour and whisk, then pour in the water.
- Add the lemon juice and let it thicken a little, for less than 1 minute or as needed. Return the chicken to the pan so it absorbs the flavours and salt.
- Stir in the lemon zest and serve the lemon chicken strips hot.
