Instructions
- Mix the cornflour, salt, black pepper and garlic powder in a shallow bowl. Coat the chicken chunks in the mixture.
- Heat a large frying pan over medium-high heat and spray with oil. Add the chicken and cook 8 to 10 minutes, turning often, until golden brown and cooked through.
- While the chicken cooks, put the garlic, ginger, black pepper, soy sauce, lemon juice, cornflour and sugar in a bowl and mix. Once the cornflour dissolves, stir in the chicken stock. Set aside.
- Remove the cooked chicken from the pan and place it in a bowl.
- Heat a separate pan or wok over medium heat with a spray of oil and the sesame oil. Stir-fry the spring onions, garlic and ginger for 30 seconds.
- Add the noodles, soy sauce and white pepper and toss. Heat 3 to 4 minutes, tossing often, until hot. Then turn the heat very low, or off with foil over the top, to keep warm.
- Pour the sauce into the chicken pan and bubble for 2 minutes, stirring often, until thickened.
- Return the chicken to the pan and heat for a minute or two, stirring to coat, until hot.
- Serve the chicken over the noodles, topped with spring onions, black pepper and sesame seeds, with lemon slices if liked.
