Lemongrass Chicken Rice Paper Rolls
Ingredients
- Chicken thigh · boneless350 g
- Fish sauce1 ½ tbsp
- Brown sugar8 tsp
- Lemongrass1 tbsp
- Lime1 tbsp
- Garlic2
- Canola oil1 tbsp
- Rice10
- Noodle · dried70 g
- Cabbage1 cup
- Red cabbage1 cup
- Carrot1
- Cilantro¼ cups
- Mint¾ cups
- Peanut butter1 ½ tbsp
- Hoisin sauce2 tbsp
- Vinegar1 tbsp
- Milk¼–⅓ cups
- Salt0.13 tsp
- Chili pepper · crushed paste½ tsp
Instructions
- Mix the marinade ingredients in a bowl, add the chicken and toss to coat. Leave for 15 minutes, or overnight.
- Mix the peanut sauce ingredients in a small bowl until combined, adding milk if needed to loosen it.
- Soak the vermicelli noodles in hot water for 2 minutes, then drain well and let cool.
- Heat the oil in a large non-stick pan over high heat until very hot. Add half the chicken, leaving the leftover marinade in the bowl, and cook for 3 minutes, stirring constantly, until lightly caramelised. Move to a plate to cool. Repeat with the rest of the chicken.
- Fill a large bowl with warm water.
- Dip a rice paper sheet in the water for 2 seconds, rotating it so every section gets 2 seconds if the bowl is small. Lay it smooth side down on a board.
- Place a little coriander just below the middle, then the chicken, carrot, cabbage and mint, and noodles last. Keep the stack neat and symmetrical.
- Fold the bottom of the rice paper up over the filling, fold in the sides, then roll tightly to enclose it. The edges will seal themselves.
- Transfer the rolls to a plate without stacking them, and serve with the peanut sauce.
