Ingredients

Instructions

  1. Prepare the mashed potatoes and vegan gravy and set aside. Preheat the oven to 400°F (200°C). Finely chop or pulse the onion, garlic and mushrooms.
  2. Add the onion and mushroom mixture to a skillet with a good pinch of salt and 1 tsp oil over medium heat. Cook for 8 minutes, until the mushrooms start to dry out. Add the carrots, celery, any other chopped vegetables (up to 1 cup), the herbs and 1/4 tsp salt, and cook for another 5 to 6 minutes.
  3. Alternatively, oil the baking dish, add the chopped onion and mushroom mixture and bake for 12 to 14 minutes. Then add the carrots, celery and other chopped root vegetables, mix in and bake for another 8 minutes.
  4. Fold the lentils, peas, BBQ sauce or tomato paste, gravy (or the alternative ingredients) and black pepper into the filling, either in the baking dish or in the skillet before transferring it. Taste, adjust salt and seasoning, and add more or less gravy to taste.
  5. Spread the mashed potatoes over the top and smooth them with a spatula.
  6. Drizzle with olive oil and sprinkle with thyme and pepper, or top with garlic breadcrumbs.
  7. Bake for 20 to 25 minutes, then broil for a minute to brown. Let it cool for a few minutes before serving.
