- Sugar340 g
- Lemon
- Butter140 g
- Mascarpone cheese500 g
- Cream500 g
- Limoncello and around250 g
- Ladyfinger12

- Make the lemon curd first: in a small saucepan, combine the lemon juice, grated zest, sugar and eggs. Cook gently for a few minutes, stirring constantly, until it thickens into a smooth cream.
- Strain the curd quickly into a cold container, then gradually stir in the diced butter while still warm. Cover the surface with plastic wrap and chill in the fridge.
- For the mascarpone mousse, whisk the egg yolks with the sugar in a bowl. Heat to 80°C (176°F) to pasteurize, then whip until light and airy.
- Gently fold in the mascarpone, then the semi-whipped cream, using upward strokes to keep it soft and fluffy.
- Dip the ladyfingers briefly in limoncello and place a first layer in the serving dish. Spread a layer of mousse on top and keep alternating layers.
- Spread the chilled lemon curd over the top of the dessert and finish with freshly grated lemon zest.
