Ingredients
- Oil10 ml
- Beef800 g
- Onion powder6 g
- Garlic powder6 g
- Smoked paprika6 g
- Chili powder0.1 g
- Worcestershire sauce22 ½ ml
- Salt
- White pepper · ground
- Onion1
- Bell pepper2
- Mozzarella cheese200 g
- Tortilla5
- Mayonnaise
Instructions
- Freeze the steak for 20–30 minutes to firm it up, then thinly slice it. Mix the sliced steak with the dry seasoning in a bowl.
- Heat a pan over high heat with a light coat of spray oil. Sear the steak for 2 minutes, or until golden. Remove it and repeat in batches so the pan is not overcrowded.
- In the same pan over medium-high heat, add a little more spray oil, the onion, bell pepper, and a pinch of salt and pepper. Sauté for 5–6 minutes, stirring often.
- Return the seared steak, any resting juices and the Worcestershire sauce to the pan. Mix, then adjust the seasoning. Add half the mozzarella, stir until melted, and take off the heat.
- Warm the tortillas slightly so they fold easily. Put 20 g of the remaining mozzarella on each tortilla, top with one fifth of the cheesesteak mix, and drizzle with sriracha mayonnaise. Wrap and fold tightly.
- Toast the wraps in a dry pan over medium heat, or place them on a tray, lightly spray with oil and bake at 200°C (390°F) for 8–10 minutes until golden and crispy. For an air fryer, lightly spray the wraps and cook at 200°C (390°F) for 5–6 minutes until golden and crispy, in batches.
