Maamoul: Middle Eastern Date Cookies Easy Ramadan Treat
Ingredients
- Semolina1 ½ cups
- Flour1 cup
- Sugar1 ½ tbsp
- Baking powder½ tsp
- Butter½ cups
- Milk½ cups
- Date · paste8 oz
- Vegetable oil1 tsp
- Cinnamon1 tsp
- Cardamom½ tsp
Instructions
- In a large bowl, mix the fine semolina with the flour, sugar and baking powder.
- Rub in the butter with your hands until fully combined into the mixture.
- Add the milk in two batches, mixing well after each, until the dough comes together into a soft dough you can shape into balls.
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- For the filling, mix the date paste with the vegetable oil, cardamom and cinnamon. Oil your hands and shape 35 small balls, smaller than your mold, and set aside.
- Roll the semolina dough into 35 balls, slightly larger than the date balls.
- Flatten a semolina ball, place a date ball in the middle, and gently wrap the dough around it without crushing the filling. Roll smooth between your hands.
- Press the filled ball into the maamoul mold, then gently knock the mold on a cutting board to release it. Place smooth side down on the sheet, about 1 inch apart. Repeat with the rest.
- Bake for 18 to 20 minutes, until the bottoms are slightly golden.
- Dust with powdered sugar if you like.
