Macchiato Malva Pudding
Ingredients
- Sugar200 ml + 3 tbsp
- Egg2
- Butter · melted3 tbsp
- Apricot jam1 tbsp
- Vinegar1 tbsp
- Milk¾ cups + 1 ½
- Flour1 ½ cups
- Baking powder1 ½ tsp
- Baking soda1 tsp
- Cream1 ⅓ cups
- Whipped cream
Instructions
- Preheat the oven to 180°C (non-fan). Grease a 20x28 cm baking dish.
- Whisk the sugar and eggs until light and airy.
- Gently fold in the melted butter, jam, vinegar and milk using a spatula, taking care not to knock out air.
- Sift in the flour, Royal Baking Powder and bicarbonate of soda and fold through gently.
- Pour the batter into the dish and bake 30 to 32 minutes, until a skewer in the center comes out clean.
- Meanwhile, heat the cream and sugar in the microwave until just hot (about 2 minutes), without boiling. Add the broken chocolate, let stand a minute, then stir until smooth and silky.
- As soon as the pudding comes out, poke holes all over it with a skewer. Pour three quarters of the warm sauce over the top and let it soak in.
- Serve with the remaining warm sauce and whipped cream. If making ahead, reheat for about 15 minutes in the oven.
