Make fancy hot chocolate with me
Ingredients
- Dark chocolate · chopped6 oz
- Oat milk4 cups
- Coconut milk1 can
- Maple syrup¼ cups
- Coffee · powder2 tsp
- Salt¼ tsp
- Vanilla2 tsp
- Dutch process cocoa · powder½ cups
- Whipped cream
- Marshmallow
Instructions
- Add the oat milk and lite coconut milk to a large saucepan. Add the chopped chocolate, sweetener, espresso if using, salt and vanilla.
- Sift the cocoa powder into the pan, or sift it in advance and add it.
- Bring to a simmer over medium heat, whisking often to blend in the cocoa. When it first simmers it will rise, so lower the heat as needed. Keep a gentle simmer for 8 to 10 minutes, whisking now and then, until slightly thickened. Avoid high heat so the chocolate doesn't burn. If a skin forms, whisk it in and lower the heat a little.
- Cool for 5 to 10 minutes, then whisk and taste. Sweeten with sugar or maple syrup if desired.
- Serve topped with whipped cream, marshmallows and shaved chocolate if you like.
