Making Tamagoyaki in a Round Pan - Japanese Cooking 101

Ingredients

Instructions

  1. Whisk the eggs with the salt, soy sauce and mirin in a bowl.
  2. Heat the pan over medium-high heat and add the oil.
  3. Pour in a thin layer of egg, tilting the pan to coat the bottom.
  4. When the bottom has set but the top is still liquid, gently roll the egg into a log. If the egg cooks too long it will not stick as you roll.
  5. Push the log to one end of the pan, pour more egg into the empty space so it covers the bottom, and let the new layer set.
  6. Roll the log back over the new layer, then roll it to the other end of the pan.
  7. Repeat adding egg and rolling back and forth until all the egg is used.
  8. Remove from the pan and let cool for 3-4 minutes.
  9. Trim the ends off the log, then slice it into 1/2-inch pieces to show the spiral.
