Ingredients

Instructions

  1. Measure cold water into the cezve using your Turkish coffee cup: fill each cup and pour both into the pot.
  2. Add 3 heaped teaspoons of finely ground Turkish coffee and the sugar, if using. Stir once, then do not stir again.
  3. Place the cezve over medium to low heat and let it heat gradually.
  4. As the coffee rises and a thick foam forms, remove it from the heat just before it fully boils. Spoon the foam evenly between two cups.
  5. Return the cezve to the heat and bring to a boil once more. Remove immediately and pour slowly into the cups over the foam.
  6. Let it stand for one minute so the grounds settle, then serve with a glass of cold water.
