Making Vegan Latkes // Vlogmas
Ingredients
- Flax seed1 tbsp
- Potato · peeled2
- Onion · peeled1
- Flour4 tbsp
- Salt1 tsp
- Black pepper · ground½ tsp
- Onion powder½ tsp
- Vegetable oil
Instructions
- Whisk the flaxseed meal with the water and let it thicken while you prepare the rest.
- Grate the potatoes and onion with a food processor shredding disc, or grate the potatoes by hand and finely dice the onion.
- Wring out the excess moisture from the potatoes and onion using a clean kitchen towel or nut milk bag.
- Stir the flax mixture, flour, salt and spices into the shredded potato and onion until just combined.
- Heat about 1/4 inch of oil in a skillet over medium heat. Test it with a drop of batter: it should sizzle right away.
- Drop the batter in 2-3 tablespoon portions into the oil, flatten with a spatula, and fry about 3-5 minutes per side until brown and crispy.
- Drain the latkes on a paper towel-lined plate and sprinkle lightly with salt while still warm.
