Instructions

  1. In a bowl, combine the chicken, whisked yogurt, green chilli paste, ginger garlic paste, lemon juice, cream, garam masala, crushed black pepper, roasted crushed cumin, pink salt, roasted crushed coriander seeds, cornflour and white pepper powder, and mix well.
  2. Cover and marinate for 30 minutes.
  3. Heat the cooking oil in a pan.
  4. Add the marinated chicken and cook on medium heat for 5-6 minutes, until the oil separates and all the moisture has evaporated.
  5. Add the fresh coriander and break up the chicken pieces with a cooking spoon.
  6. Add the onion, green chillies and the remaining fresh coriander, mix well, turn off the heat and let it cool completely.
  7. Take 125g of dough, shape it into a ball, dust it with dry flour and roll it out with a rolling pin.
  8. Spread banaspati, fold the left and right sides of the rolled dough in, put 3-4 tbs of the cooled malai boti filling on it, sprinkle the grated cheese over, and brush slurry along the side of the filling.
  9. Fold the paratha by bringing the edges to the centre and pressing gently to seal it well. This makes 5-6 parathas.
  10. Heat a griddle and place a stuffed paratha in the middle.
  11. Add banaspati, flip the paratha and fry over medium heat until golden and crisp on both sides.
