Malcom Style Ribs
Ingredients
- Slabs St Louis Cut Spare Ribs2
- Killer Hogs AP Seasoning
- Vinegar1 cup
- Bbq sauce½ cups
Instructions
- Trim the silver skin and excess fat from each slab. Season both slabs with AP Seasoning and rest 15 minutes.
- Set up a drum smoker for indirect cooking at 275°F. Cover half the fire basket with foil. Before placing the ribs, add one chunk each of hickory and cherry wood and half a small onion to the hot coals.
- Season the ribs on all sides with The BBQ Rub and rest 15 minutes.
- Place the ribs on the grate, one slab over the hot coals and one over the foil side. Smoke for 2 hours, rotating the rack every 30 minutes and spritzing each slab with water at every rotation.
- When the ribs are a dark mahogany color, take them off the smoker. Pour 1/4 cup Vinegar Sauce onto a sheet of foil, lay one slab meat side down on it, and wrap, folding the ends. Repeat with the second slab.
- Stack the wrapped ribs back on the smoker on the opposite side of the fire. After 30 minutes, swap their positions.
- After 1 hour in the wrap, open one slab to check: the internal temperature should be about 202°F and the bones should start to show. Then remove the ribs and rest them 10 to 15 minutes.
- Mix 1/2 cup BBQ Sauce with 1/2 cup Vinegar Sauce. Place each slab on a foil boat, brush with the mixture, sprinkle with more BBQ Rub, and return to the smoker for 15 minutes to glaze.
- Cut the ribs into individual bones and serve.
