Ingredients

Instructions

  1. Whisk the 6 g gelatin powder with the 30 ml water or milk in a small bowl and set aside for 10-15 minutes.
  2. In a medium saucepan, heat the cream, 1 cup milk and the sugar over medium-low heat until the sugar dissolves. Do not boil.
  3. Take off the heat, stir in the vanilla bean paste, then stir in the softened gelatin and whisk until smooth and fully dissolved. Pass through a sieve.
  4. Set the glasses at an angle in a small container or muffin tin, using a folded towel underneath if they slide. Pour in the mixture and refrigerate for at least 4 hours.
  5. Whisk the 5 g gelatin powder with the 25 ml water or milk in a small bowl and set aside for 10-15 minutes.
  6. Dice the mangoes and blend until smooth in a food processor. Melt the gelatin in the microwave for 15 seconds. Stir 1 tablespoon of the puree into the melted gelatin until combined, then stir this back into the rest of the puree.
  7. Pour the mango mixture over the set panna cotta in the glasses, cover and refrigerate for at least 3 hours.
