Maple ๐ and bacon ๐ฅ popcorn ๐ฟ
Ingredients
- Bacon ยท smoked4
- Maple syrup125 ml
- Vegetable oil1 tbsp
- Popcorn100 g
- Salt
Instructions
- Preheat the oven to 140ยฐC fan-forced (285ยฐF). Lay the bacon on a wire rack over a tray and bake for 45 to 55 minutes, until the fat has rendered and the bacon is crisp.
- Pour the fat off into a bowl and crumble the bacon into another bowl.
- Boil the maple syrup in a medium saucepan to 128ยฐC (262ยฐF), then stir for 1 more minute off the heat. Beat with a whisk until it crystallises, then push through a fine sieve; you should get at least 2 tablespoons. Blitz any chunky bits in a food processor and sieve again.
- Put the bacon fat and oil in a wide, deep saucepan over medium-high heat. Add the popcorn kernels and half the maple sugar, and cover with a tight lid.
- Cook, shaking the pan now and then, until the popcorn starts to pop. Keep cooking until the popping stops, then take off the heat. Quickly add the crumbled bacon and remaining sugar, cover again and shake to combine.
- Tip the popcorn into a large bowl, season with salt, toss well and serve straight away.
