Maple Crisp Brie Bites
Ingredients
- Baguette26–30 slices
- Butter50 g
- Maple syrup6 tbsp
- Salt · flakes¼ tsp
- Prosciutto6 slices
- Brie200 g
- Pecan¼ cups
- Thyme1 tbsp
Instructions
- Preheat the oven to 180°C/350°F (160°C fan-forced) and line two large trays, first with foil and then with baking paper.
- Melt the butter in a saucepan over medium heat. Add the maple syrup and salt and stir. Once it reaches a simmer, let it simmer gently for 20 seconds, then take it off the heat.
- Brush or dab the maple butter on both sides of each bread slice and spread the slices on one tray.
- Lay the prosciutto on the other tray; it can overlap slightly as it shrinks a lot.
- Put both trays in the oven.
- At the 15-minute mark, take out the prosciutto when it is wrinkled and dark red and drain it on paper towel. It will crisp as it cools. Break into shards.
- Turn the crostini over at 15 minutes, then bake for another 5 minutes, or until the edges are crisp and the cut faces are lightly crisp but not hard all the way through.
- Let the crostini cool for 10 minutes or until room temperature.
- Top each crostini with a slice of brie, a prosciutto shard, a pinch of pecans, a tiny drizzle of maple syrup if you like, and a few thyme leaves.
