- Dijon mustard1 tbsp

Instructions
- Season the chicken with onion powder, garlic powder, olive oil, salt and pepper.
- In a large heavy-based pan over medium heat, add 1 tbsp olive oil and sear the chicken for 3 1/2 minutes per side until golden and just cooked through. Remove and set aside, in batches if needed to avoid crowding.
- In the same pan over medium-high heat, add the sun-dried tomato oil, butter, onion and salt, and sauté for 5 to 6 minutes.
- Add the garlic and cook for 1 minute, stirring often.
- Deglaze with the white wine (or chicken stock) and cook for 1 to 2 minutes, scraping up any stuck bits.
- Add the Dijon mustard and seasoning to taste and mix until combined.
- Add the chicken stock (3/4 cup), thickened cream, sun-dried tomatoes, Parmesan and dried chilli flakes. Stir well and bring to a heavy simmer.
- Once simmering, add the thyme and oregano and stir well. Reduce the heat to low and cook for 6 to 8 minutes, or until thickened.
- Stir in the Parmesan and basil leaves. Add the seared chicken with its resting juices and adjust the seasoning. Cook for 1 minute to heat the chicken through and thicken the sauce, then remove from the heat and serve.
