Marshmallow Slice Recipe
Ingredients
- Butter1 stick
- Sugar3 cups
- Egg2
- Flour1 ⅔ cups
- Baking powder1 tsp
- Gelatin1 tbsp
- Raspberry · dried½ tsp
Instructions
- Preheat the oven to 180°C (350°F).
- Beat the room-temperature butter and icing sugar on medium speed for 2 to 3 minutes until light and fluffy.
- Beat in the egg for another minute until fully combined.
- Add the flour and baking powder and mix until combined, scraping down the bowl.
- Press the dough into a lined 20 cm (8 in) square pan, using a wet spoon to spread it. Bake for 20 to 25 minutes, until the edges start to brown. Cool in the pan.
- Sprinkle the gelatine over the water in a saucepan and leave for 5 minutes to soften.
- Add the sugar and heat over medium, stirring until it boils. Then cook for 3 to 4 minutes without stirring, and turn off the heat.
- Beat the egg white on low until frothy, then increase to medium until opaque and soft peaks form.
- Turn the mixer to high and pour in the hot sugar mixture very slowly.
- Keep beating on high for 10 to 15 minutes until thick like whipped cream and able to hold its shape. Beat in any flavouring.
- Spread the marshmallow over the cooled base, sprinkle with freeze-dried raspberries, and leave to set for about 6 hours or overnight.
- Remove from the pan and cut into 12 pieces.
