Ingredients

Instructions

  1. In a large bowl with a mixer and paddle, beat the butter, granulated sugar and brown sugar on medium-high until fluffy and light, about 3 minutes. Add the egg and vanilla and beat on high until combined, scraping the bowl as needed.
  2. In a separate bowl, whisk together the flour, cocoa powder, hot cocoa mix, baking soda and salt. Add to the wet ingredients and beat on low until combined; the dough will be very thick. Beat in the milk until the dough is thick and sticky.
  3. Cover the dough and chill at least 2 hours and up to 3 days. The chilling is essential.
  4. Preheat the oven to 350°F (177°C). Line large baking sheets with parchment or silicone mats.
  5. Scoop and roll the dough into balls of about 1 heaping tablespoon (25–26 g) each and place them 2–3 inches apart on the sheets.
  6. Bake for 10 minutes. Remove, press a marshmallow half cut side down into the top of each cookie, then bake 2 more minutes. Remove and gently press the marshmallow flat with the back of a spoon.
  7. Cool on the sheet for 10 minutes, then move to a wire rack to cool completely.
  8. Melt the chocolate in a double boiler or microwave in 20-second bursts, stirring until smooth. Spoon it over each cooled cookie and let it set at room temperature for 30–60 minutes before stacking or storing.
