Masala Chai (Tea Recipe)

Ingredients

Instructions

  1. Grind or crush the cloves, cardamom, cinnamon stick and black pepper to a powder in a mortar or spice grinder.
  2. Heat the water in a pot. Add the ground spices, the crushed or chopped ginger and the tea. Start with less tea and add more after the milk if needed.
  3. Bring to a rolling boil, then reduce to medium heat and boil for 3 minutes until the decoction turns dark.
  4. Add the milk and sugar and bring to a boil over medium-high heat. If using tea bags, remove them now and set aside.
  5. Reduce the heat and simmer for about 2 minutes until the chai is dark. It is ready when a layer of cream forms on top and the milky flavour is gone.
  6. Optionally, pull the chai: pour it from a height of 1 to 1½ feet back into the pot in a slow stream, 4 to 5 times, using a ladle or measuring cup. Then strain into cups and serve.
