- Cheddar cheese · shredded6 oz
- Bacon½ cups

- Preheat the oven to 375°F (190°C).
- Peel the potatoes and cut them into 1½ inch (4 cm) pieces. Rinse them in a colander under cold water for one minute.
- Put the potatoes in a large pot, cover with at least an inch of well-salted water, and bring to a boil over high heat, stirring occasionally.
- Once fork-tender, drain the potatoes, return them to the pot and let them sit for a minute to steam off excess water.
- Add the milk, butter, sour cream or cream cheese, garlic, salt and pepper, and mash to the desired texture. Stir well.
- Stir in 1 cup (4 oz) of the shredded cheddar until well distributed.
- Spread the potatoes in a 2 to 2.5 quart casserole dish. Top with the remaining ½ cup (2 oz) of cheddar and the crumbled bacon.
- Lightly butter a large piece of foil and cover the dish with it, buttered side down. Bake on the centre rack at 375°F (190°C) for 20 minutes.
- Remove the foil and bake 15 to 20 minutes more, until the cheese is melted and bubbly.
- Top with chives or scallions and serve warm.
