Ingredients

Instructions

  1. Season the steak with salt, pepper and garlic powder. For best results, set it on a wire rack over a baking sheet and refrigerate uncovered, ideally overnight.
  2. One hour before cooking, take the steak out of the fridge and let it come to room temperature.
  3. Heat the oil in a heavy pan, preferably cast iron, on high until it just starts to smoke.
  4. Put the steak in the pan and leave it alone. Sear one side for 30 seconds, pressing down with a weight or spatula for full contact.
  5. Flip the steak every 30 seconds until 2 minutes have passed, then add the butter, rosemary, sage and garlic.
  6. Baste the steak while flipping it every 30 seconds for another 2 minutes.
  7. Check the internal temperature and remove the steak from the heat when it is 10 degrees below your desired doneness.
  8. Rest the steak for 10 to 15 minutes, then slice and finish with flaky salt.
