Matcha Brownies Recipe (Green Tea Brownies)
Ingredients
- Flour100 g
- Matcha powder20 g
- Baking powder¼ tsp
- Salt0.13 tsp
- White chocolate140 g
- Butter80 g
- Egg2
- Sugar200 g
- Vanilla1 tsp
Instructions
- Line an 8x8-inch pan with parchment paper. Set the oven rack to the middle position and preheat the oven to 320°F (160°C).
- Sift together 100 g all-purpose flour, 20 g matcha powder, ¼ teaspoon baking powder and ⅛ teaspoon salt into a bowl, and whisk until evenly combined.
- In a microwave-safe bowl, melt 140 g white chocolate and 80 g cultured unsalted butter in the microwave at 300 watts for about 1½ minutes. Do not let it boil.
- Stir the melted mixture until smooth and lump-free. If it is not fully melted, microwave at 300 watts in 30-second bursts.
- Whisk 2 eggs into the chocolate mixture until uniform in colour.
- Add 200 g evaporated cane sugar and 1 teaspoon vanilla extract, and whisk until smooth and thick.
- Pour the wet mixture into the dry ingredients and fold until smooth and free of lumps.
- Spread the batter in the prepared pan and level the top with a spatula. Bake for about 18 to 20 minutes, until done to your liking. Shorter baking gives a denser, fudgier brownie; longer gives a cakier one.
- Move the brownies to a cooling rack and lift them out of the pan using the parchment right away, so residual heat does not overbake them.
- Cool completely, then cut into squares or bars. Cut small pieces, as they are very sweet and high in caffeine.
