Ingredients

Instructions

  1. Sift 90 g of the flour onto a sheet of baking paper. Sift the remaining 80 g of flour together with the matcha powder onto another sheet.
  2. Beat the butter until creamy, then add the sugar in 3 to 4 batches, mixing well after each addition.
  3. Mix in the egg yolk, then the salt and vanilla.
  4. Divide the butter mixture between two bowls. Add the 90 g vanilla flour to one bowl and the matcha flour to the other, cutting it in with a spatula until no powder remains. Wrap each dough in a rectangle about the size of your palm and chill for at least 2 hours, or up to a day.
  5. Split each dough into two equal portions. For checkerboard cookies, shape half of the vanilla dough and half of the matcha dough into 3 cm square logs, wrap, and chill for 1 hour until firm.
  6. Cut each square log lengthwise into quarters. Glue the strips together with egg white, alternating vanilla and matcha so the four strips form a checkerboard, then repeat with the other log and chill both for 1 hour until firm.
  7. For swirl cookies, soften the remaining vanilla and matcha dough, then roll each between plastic sheets or in a zip bag to a thin, even sheet about 2 to 3 cm below the zip, fold and roll it to fill the bag, and chill for 1 hour until firm.
  8. Brush the vanilla sheet with egg white, lay the matcha sheet on top without trapping air, brush the surface, roll tightly into a log, wrap, and chill for 1 hour until firm.
  9. Trim the rough edges of the logs and save the scraps. Slice the checkerboard and swirl logs into 6 to 7 mm discs.
  10. Gather the saved scraps into a thick disc about the diameter of the swirl cookies, then slice it to the same thickness.
  11. Preheat the oven to 180°C (356°F). Arrange the cookies on a lined tray and bake for 12 to 13 minutes, then switch off the oven and leave the door open for 1 to 2 minutes.
  12. Move the cookies to a rack and let them cool for about 30 minutes to 1 hour.
