Meal Prep - Egg Roll in a Bowl with Sweet & Sour Sauce
Ingredients
- Olive oil1 tbsp
- Garlic · minced1 tbsp
- Scallion · chopped⅓ cups
- Ginger2 tsp
- Ground turkey1 lb
- Broccoli6 cups
- Pineapple juice1 cup
- Ketchup2 tbsp
- Soy sauce1 ½ tbsp
- Rice wine vinegar⅓ cups
- Arrowroot1 ½ tbsp
Instructions
- Heat a large nonstick skillet or wok over medium heat. Add the oil, garlic, ginger and green onion, and cook until fragrant, about 2 to 3 minutes. Turn the heat up to medium-high.
- Add the ground turkey and break it up as it cooks. When it is almost cooked, about 6 minutes, add the broccoli slaw or shredded cabbage.
- Keep folding until the vegetables have slightly wilted and shrunk. Transfer everything to a large bowl, then return the skillet to medium heat.
- Mix the sauce ingredients together.
- Pour the sauce into the skillet and bring to a gentle simmer, about 1 minute, stirring constantly so it doesn't clump or turn slimy. Take it off the heat as soon as it starts to simmer and keep stirring.
- Pour the sauce over the bowl of filling and toss to combine.
