Meal Prep - Honey Lemon Shrimp Recipe with Veggies & Rice
Ingredients
- Soy sauce3 tbsp
- Garlic · minced1 tbsp
- Lemon1 tbsp
- Honey2 tbsp
- Shrimp · peeled1 ½ lb
- Rice1 cup
- Chicken stock1 cup
- Olive oil1 ½ tbsp
- Broccoli2 cups
- Onion · chopped½ cups
- Bell pepper · sliced1
- Arrowroot + 1 tablespoon water + remaining sauce1 tbsp
Instructions
- Mix the sauce ingredients. Pour about 2 tablespoons of the sauce over the shrimp in a bowl and marinate for at least 20 minutes.
- In a deep nonstick skillet with a tight-fitting lid, combine the rice ingredients and bring to a boil. Reduce to a low simmer, cover and cook until all the water is absorbed.
- When the rice is nearly cooked, uncover and place the broccoli florets on top to steam, then cover again and cook for the remaining time.
- Remove the rice and broccoli and set aside, then return the skillet to the heat.
- Set the heat to high. When hot, add the onion and bell pepper and sear until the edges are browned, about 3 to 5 minutes. Remove and set aside.
- Return the skillet to the heat and reduce to medium-high. Add the olive oil and marinated shrimp and sear until nearly cooked (plump and pink), about 3 minutes.
- Mix the remaining sauce with the arrowroot and water and add it to the skillet.
- Reduce the heat to low-medium. As soon as the sauce begins to bubble, stir and fold the shrimp in it.
- Remove from the heat once the sauce is thick, and keep stirring and folding.
- Divide the rice, broccoli, vegetables and shrimp evenly into 4 servings, or the number of servings you need.
