Meal Prep - Steakhouse Beef & Broccoli with Sweet Potato
Ingredients
- Sweet potato4
- Olive oil1 tbsp
- Garlic · minced1 tbsp
- Onion · diced½ cups
- Beef1 ½ lb
- Thyme · dried1 tbsp
- Cracked pepper
- Soy sauce⅓ cups
- Worcestershire sauce¼ cups
- Arrowroot2 tbsp
- Broccoli3 cups
- Scallion
Instructions
- Preheat the oven to 400°F. Prick a sweet potato several times with a fork, wrap it in foil and bake on a baking tray for 40 minutes, or until a fork pierces it easily.
- Set a nonstick skillet over medium heat. Add the oil, garlic and onion and cook until the onion edges turn brown and translucent, about 3 minutes.
- Raise the heat to medium-high, add the flank steak pieces, and sprinkle in the thyme and cracked pepper. Sear the beef for about 4 to 6 minutes.
- While the beef sears, mix the sauce ingredients in a small bowl.
- Lower the heat to medium, fold the broccoli into the beef, and make a well in the centre. Pour in the sauce and bring to a light simmer. Once it bubbles, stir constantly so the sauce does not clump.
- Take the skillet off the heat and keep stirring until the sauce thickens.
- Split the baked sweet potatoes, divide the beef and broccoli among them, and serve.
