Meatloaf

Ingredients

Instructions

  1. Remove the crust from the bread and cut the crumb into cubes. Put the bread in a bowl, cover it with milk (or water) and let it soak.
  2. In a large bowl, put the ground meat and crumble the sausage in by hand, removing the casing. Add the grated pecorino, the eggs, and the bread crumb after squeezing it well.
  3. Season with thyme leaves, grated nutmeg, salt and pepper.
  4. Mix everything well by hand for at least 5 minutes until it comes together. Place the mixture on a large sheet of parchment paper.
  5. Use the parchment to shape the mixture into a cylinder about 12 x 4 inches. Move the meatloaf and its paper into a baking dish and brush the surface with oil.
  6. Wash and halve the new potatoes, then put them in a bowl with the peeled, quartered shallots. Add oil, chopped sage and thyme, salt and pepper, and mix well to season evenly.
  7. Arrange the potatoes in the baking dish around the meatloaf. Bake in a preheated static oven at 355°F for about 80-90 minutes, until done.
  8. Take the dish out of the oven and serve.
