- Yoghurt3 tbsp
- Bell pepper · paste
- Tomato paste1 tbsp
- Lemon1
- Parsley⅓ cups
- Cilantro⅓ cups + ½ tsp
- Cumin1 tsp
- Paprika1 tsp
- Salt1 tsp
- Pepper½ tsp
Instructions
- Cut the chicken thighs into even pieces about 1½ inches thick and put them in a large bowl.
- Add the olive oil, yogurt, lemon juice and zest, tomato paste, parsley, cilantro, cumin, coriander, paprika, salt and pepper to the chicken and coat every piece well.
- Massage the marinade into the chicken by hand, cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight.
- If using wooden skewers, soak them in water for at least 30 minutes so they don't burn.
- Thread the marinated chicken onto the skewers, leaving a little space between pieces.
- Preheat the grill or grill pan to medium-high heat, or the oven to 400°F (200°C).
- On the grill, cook the skewers 5 to 7 minutes per side until the chicken is cooked through and has grill marks.
- In the oven, place the skewers on a lined baking sheet and bake 20 to 25 minutes, flipping halfway, until cooked through and golden brown.
- Rest the skewers for a few minutes after cooking before serving.
