Ingredients

Instructions

  1. Set the oven to 400°F.
  2. Slice the tops off the tomatoes, scoop out the insides with a spoon or grapefruit knife, and put the pulp in a bowl. Do the same for all tomatoes and place them in a baking dish.
  3. Heat a large nonstick skillet over medium-high heat and lightly spray it with avocado oil. Add the beef and lamb and break them up as they cook.
  4. Add the onion, garlic and seasonings and cook with the meat for about 3 minutes.
  5. Reduce the heat to medium, pour in the red wine and cook for 2–3 minutes, until reduced by half.
  6. Add the parsley, the cooked rice and about 1 1/2 cups of tomato pulp. Cover and cook for 15 minutes, until the tomato is soft and breaks down into a sauce. Lower the heat if too much liquid evaporates and the meat starts to burn.
  7. Stuff the tomatoes with the rice mixture, cover the dish with foil and bake for 25–30 minutes, until the skins begin to peel. Bake uncovered for the final 5 minutes.
  8. Let cool slightly before serving, then garnish.
