- Thyme · dried½ tsp
- Tomato2
- Chickpea1 can
- Parsley · chopped2 tbsp
- Lemon2 tsp

Instructions
- Heat a large frying pan over medium heat and add 2 tbsp (30 ml) extra virgin olive oil.
- Thinly slice the onion, thinly slice 4 cloves of garlic and cut the red bell pepper into small thin strips. Add them to the hot pan and stir every 1–2 minutes so they saute evenly.
- Meanwhile, heat a small saucepan over medium heat with 1 tbsp (15 ml) extra virgin olive oil. Roughly chop 3 cloves of garlic and add them to the pan, stirring constantly. After about 1 minute, when the garlic smells fragrant, add the broth and season lightly with sea salt and black pepper, stirring gently.
- When the vegetables are lightly sauteed, after 5–6 minutes, add the grated tomatoes, dried oregano and dried thyme, mix, and let simmer.
- When the tomatoes have slightly thickened, after about 3–4 minutes, add the drained and rinsed chickpeas, chopped parsley and lemon juice. Season with sea salt and black pepper, mix well, then lower the heat to medium-low.
- When the broth reaches a boil, stir in the couscous, cover the pan and remove it from the heat.
- After 5 minutes, remove the lid and gently fluff the couscous with a fork.
- To serve, spread some couscous on a serving dish, spoon the simmering vegetables over it and top with chopped parsley.
