Meethi Seviyan Recipe (Sweet Vermicelli)
Ingredients
- Seviyan150 g
- Sugar½–¾ cups
- Ghee3–4 tbsp
- Cardamom · powder½ tsp
- Milk1 ½ cups
- Nuts4 tbsp
- Rose water1 tsp
- Mawa /khoya3 tbsp
Instructions
- Heat the ghee in a heavy-bottomed pot and fry the vermicelli until golden, stirring gently because it breaks easily. If using roasted vermicelli, fry only for a few seconds.
- In another pot, add the sugar and pour in the water or milk. Bring to a boil and stir until the sugar fully dissolves.
- When the syrup reaches a rolling boil, pour it over the roasted vermicelli.
- Stir gently and cook until all the liquid has been absorbed.
- Add the cardamom powder and kewra water (if using), then add the mawa (if using) once the vermicelli begins to pull away from the sides.
- Turn off the heat, leave uncovered to cool a little, then fluff with a fork as it cools.
- Garnish with the nuts and serve hot or warm.
