Ingredients
- Ciabatta loaf1
- Olive oil
- Bell pepper2
- Red onion2
- Zucchini4
- Rosemary½
- Beef350 g
- Balsamic vinegar
- Basil1 handful
- Mozzarella cheese1 x 150 g
- Pesto8 tbsp
Instructions
- Preheat the barbecue for direct cooking over high heat, to about 290°C.
- Cut the ciabatta in half lengthways, drizzle with 1 tablespoon olive oil, and grill cut side down for 2 to 3 minutes until golden.
- Deseed the capsicums and cut into 2 cm slices. Peel the onions and cut into 1 cm rings. Cut the zucchini diagonally into 1 cm slices. Season well.
- Tie the rosemary to the end of a wooden spoon with string to make a brush. Dip it in a little olive oil and brush the barbecue, then grill the vegetables for 10 minutes, turning often, until soft and caramelised.
- Meanwhile, cut the steak into 1 cm strips and season all over with sea salt and black pepper.
- Move the vegetables to a large bowl, drizzle with 2 tablespoons balsamic vinegar and 1 tablespoon olive oil, and toss. Tear the basil leaves and mozzarella over them.
- Brush the barbecue again with the oiled herb brush, add the steak strips and cook about 5 minutes until browned, turning occasionally. Transfer to a plate and rest for 1 minute.
- Spread the cut sides of the ciabatta with pesto. Top one half with steak, vegetables and mozzarella, add the other half, press lightly and cut into 4 pieces.
