men will disappoint but never potatoes
Ingredients
- Potato500 g
- Butter100 g
- White miso2 tbsp
- Soy sauce2 tbsp
- Mirin2 tbsp
- Milk2
- Sprinkle of white pepper powder
- Salt
Instructions
- Boil the whole potatoes in a large pot, then simmer on medium-low for 15 to 20 minutes, until a chopstick or knife slides easily through the centre.
- Meanwhile, melt the butter in a medium saucepan over medium heat until nearly melted.
- Add the white miso and turn the heat to low. Cook gently, whisking until the miso is fully mixed into the butter.
- Add the soy sauce and stir, then add the mirin and whisk until the sauce emulsifies. It should not split. Pour into a separate container and set aside.
- While the potatoes are hot, peel them with a cloth, rubbing the skin off gently.
- Press the hot potatoes through a fine sieve.
- Put the sieved potato into the same saucepan. Cook over medium heat, letting some of the water evaporate.
- Add the miso butter in four additions, folding gently after each. Keep a little back for garnish.
- Stir in milk, 2 to 4 tablespoons, until the potato reaches the consistency you want.
- Season with white pepper and salt to taste, then drizzle with the reserved miso butter.
