Milk Tart Parcels
Ingredients
- Filo pastry6
- Butter · melted¼ cups
- Cream3 cups
- Sweetened condensed milk1 cup
- Cinnamon stick2
- Custard · powder⅓ cups
- Cinnamon · powder2 tbsp
Instructions
- Preheat the oven to 160°C fan-assist and grease a 12-hole muffin tray.
- Stack the pastry sheets one at a time, brushing each with melted butter, finishing with a buttered top layer.
- Cut the stack into 12 even squares (4 by 3).
- Press each square into a muffin hole to form a parcel.
- Bake for 20-25 minutes until golden and crisp.
- While the pastry bakes, add 2 cups of the milk, the condensed milk and the cinnamon sticks to a medium saucepan and bring to a simmer, whisking.
- In a large bowl, whisk the custard powder into the remaining 1 cup of cold milk until fully dissolved.
- Pour the custard mixture into the hot milk and whisk over low heat for 1-2 minutes until smooth and thickened. Remove the cinnamon sticks. If lumps form, pass the custard through a sieve.
- Transfer the baked pastry to a large tray and divide the custard among the parcels, smoothing the tops with the back of a spoon.
- Dust with cinnamon and refrigerate for 2 hours to set.
