Ingredients

Instructions

  1. Preheat the oven to 190°C and line a 26x20 cm baking dish with baking paper, letting it hang over the sides.
  2. Sift the cake flour and cocoa powder into a large bowl. Add the golden brown sugar and salt and mix well.
  3. Whisk in the melted butter and eggs until just combined into a rich brownie batter.
  4. Pour the batter into the dish and smooth it out. Bake for about 35 minutes, or until a skewer inserted in the centre comes out clean. Let it cool slightly in the dish.
  5. While the brownie bakes, combine all the caramel ingredients in a large microwave-safe bowl and stir.
  6. Microwave on high for about 7 minutes, stirring every minute. Set the caramel aside to cool slightly. For a 700W microwave, microwave for about 9 minutes instead.
  7. Poke holes in the brownie with the back of a wooden spoon and pour the cooled caramel over the top. Chill for 30 minutes to 1 hour to set.
  8. Melt the chocolate in the microwave, stirring every 20 seconds until smooth. Pour it over the set caramel and, before it sets, scatter the peanuts on top.
  9. Let it set for about 15 minutes, then lift the whole slab out by the baking paper. Slice into equal squares with a sharp knife dipped in warm water.
