Millionaires Shortbread Recipe
Ingredients
- Butter1 ½ + 1 stick
- Sugar1.08 cups
- Flour2 cups
- Sweetened condensed milk1 can
- Golden syrup2 tbsp
- Vanilla1 tsp
- Salt1–3 tsp
- Chocolate5 oz
- Oil2 tbsp
Instructions
- Whisk the butter and the 65g sugar until smooth. Add the flour and fold with a wooden spoon or spatula until the mixture resembles wet sand.
- Line a 20cm square baking pan with non-stick paper and press the base into an even layer.
- Bake at 160°C/320°F for about 35 minutes, until the edges just start to brown. Let it cool completely before making the caramel.
- In a saucepan, combine the 110g butter, condensed milk, 150g sugar and golden syrup (or honey). Heat over medium to low heat for about 5 minutes, stirring constantly. Once it turns golden, remove from the heat and let it cool a few minutes, then stir in the vanilla and salt.
- Pour the caramel over the cooled base and tilt the pan so it reaches the corners. Refrigerate for a few hours until fully set.
- Melt the chocolate with the oil over a water bath or in the microwave in short bursts until smooth. Pour over the caramel and refrigerate for a few hours until set.
- Remove from the pan, peel off the paper, and cut into 12 to 16 even slices.
- Store the sliced shortbread in a sealed container in the fridge.
