Instructions
- Mix the filling in a bowl: capsicum cubes, boiled corn, onion cubes, sliced black olives, grated cheddar, crushed red chilli, dried oregano, pink salt, Italian herbs and chopped coriander. Set aside.
- In a bowl, combine warm water, caster sugar and instant yeast. Mix, cover and let it proof for 5 minutes.
- Add half of the flour, the egg, cooking oil and pink salt. Mix until gluten forms, about 2-3 minutes.
- Add the remaining flour, mix, then knead until a dough forms.
- Grease the dough with oil, cover and let it proof for 1 hour in a warm place.
- In a small bowl, mix egg white, water and honey. Set aside.
- Knead the dough again until smooth.
- Shape 70g pieces into balls. Dip each ball in the honey mixture and coat with sesame seeds.
- Place the balls on a baking tray lined with baking paper, cover with a kitchen cloth and proof for 20 minutes in a warm place.
- Press a small flat-bottomed glass, dipped in the honey mixture, into each ball to make a cavity. Prick the cavity with a fork, then add pizza sauce, filling and mozzarella. Makes 9-10.
- Bake in a preheated oven at 180°C for 10-12 minutes, using both grills with fan.
