Miso Grilled Pork - Noriko's Kitchen - Japanese Cooking 101
Ingredients
- Pork loin2
- Miso · paste3 tbsp
- Sake2 tbsp
- Mirin1 tbsp
- Sugar1 tbsp
- Ginger1 tsp
- Oil1 tbsp
- Garlic1 clove
Instructions
- Cut the sinew from the pork with a knife, then pound it with a meat tenderizer.
- Put the pork, miso paste, sake, mirin, sugar and grated ginger in a storage bag and knead well. Marinate for 1 hour at room temperature, or for a few hours to overnight in the refrigerator.
- Scrape excess seasoning off the pork with a spoon so it does not burn.
- Heat the oil in a frying pan over medium-low heat. Add the sliced garlic and cook until golden brown, then remove it.
- Add the pork and cook, covered, over low heat until nicely browned. Turn it over and cook the other side the same way, covered, until browned.
- Slice the pork into 6 to 8 strips and serve with the fried garlic.
