- Urad dal¼ cups
- Green gram¼ cups
- Chana dal¼ cups
- Toor dal¼ cups
- Ginger½ inches
- Cumin½–¾ tsp
- Chili pepper1
- Salt½–¾ tsp
- Oil1 ½–2 tbsp
Instructions
- Wash the lentils at least three times, then soak them in fresh water for at least 4 hours (or overnight).
- Drain well and put the lentils in a blender with the ginger, green chili, cumin and salt. Add ½ cup water and blend to a smooth batter.
- For crisp dosas, blend with less water to a thick batter. For soft dosas, add more water to make a slightly runny batter. Taste and add more salt if needed.
- Grease a dosa pan or griddle lightly and heat it well over medium flame.
- Pour ¾ cup of batter into the center and quickly spread it into a thin dosa.
- Cook over medium heat and drizzle some oil around the edges. Optionally, scrape off the excess batter with a spatula and spread it evenly.
- When the edges start to lift from the pan, flip and cook until brown spots appear.
- Flip again and cook until crisp. Transfer to a plate and repeat with the remaining batter.
