Mixed Vegetable Pakora Baked Fritters
Ingredients
- Loaded cup1
- Onion · chopped¾–1 cup
- Broccoli½–¾ cups
- Carrot · chopped⅓ cups
- Potato · chopped cooked⅓ cups
- Chili pepper1
- Ginger½ inches
- Cilantro · chopped¼ cups
- Mint1 tbsp
- Carom seed⅓ tsp
- Cayenne pepper¼ tsp
- Salt½ tsp
- Chaat masala1 tsp
- Semolina flour2 tbsp
- Chickpea flour⅔ cups
- Baking soda¼ tsp
- Oil2 tsp
Instructions
- Cut the vegetables into similar 1 to 1.5 inch pieces. Pulse the vegetables, green chili, ginger, cilantro and mint in a food processor until evenly finely chopped. Add any extra greens at this stage if you like.
- Transfer to a bowl. Mix in the spices, salt, 1/3 teaspoon chaat masala and semolina.
- Add the chickpea flour, sprinkle over the baking soda and mix in. Add another tablespoon of chickpea flour if needed; the vegetables should have only a light coating of flour.
- Let the mixture rest 2 to 3 minutes so the vegetables release some moisture into the flour. Preheat the oven to 425°F (220°C).
- Add the oil and 1 to 2 teaspoons of water and mix. Add water a teaspoon at a time until the mixture holds together in balls but is not a batter.
- Shape small scoops about 1.5 inches across onto a parchment-lined baking sheet. Spray or brush them with oil.
- Bake 22 to 25 minutes, until golden brown and crisp outside. Cool for a minute, sprinkle with the remaining chaat masala, and serve with mint chutney, tamarind date chutney, ketchup or your favourite sauce.
