- Raisin1 packet
- Pecan1 packet
- Butter500 g
- Brown sugar1 ¾ cups
- Buttermilk2 cups
- Egg2
- Vanilla1 tbsp
- Coffee
Instructions
- Preheat oven to 180°C fan-assist. Line and grease two medium baking trays (60x25cm).
- Sift the flour, baking powder and salt into a large bowl. Add the raisins and roughly chopped pecans and stir through evenly.
- Melt the butter in a large heatproof bowl.
- Stir the sugar into the melted butter until well combined. Mix in the buttermilk, eggs and vanilla essence.
- Fold the wet ingredients into the dry ingredients without overmixing.
- Spread the dough evenly into the prepared trays without pressing out all the air. Score before baking if you want easier cutting later.
- Bake about 1 hour, until a skewer inserted in the centre comes out clean. Cool.
- Reheat oven to 90°C. Slice into neat logs and place on a wire rack over a baking tray. Dry in the oven about 3–4 hours with the door slightly ajar, propped with a wooden spoon.
