Ingredients

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Pulse 22 regular Oreos, filling included, into fine crumbs (about 2 cups packed, or 250g). Put the crumbs in a large bowl, add the 5 Tablespoons (71g) melted butter and stir until combined. Press the mixture into an ungreased 9-inch pie dish, up the sides, to form a thick crust.
  3. Bake the crust for 10 minutes, then let it cool while you make the filling.
  4. Whisk the 4 egg yolks and the 1/4 cup (30g) cornstarch together in a medium heatproof bowl with a pour spout until thick. Set aside.
  5. Heat the 2 cups (480ml) whole milk, 1/2 cup (120ml) heavy cream, 1 cup (200g) sugar and 1/8 teaspoon salt in a medium saucepan over medium heat, whisking until the sugar dissolves and the mixture gently simmers.
  6. Whisk about 1/2 cup (120ml) of the hot milk mixture slowly into the yolk mixture. Then pour the yolk mixture back into the saucepan in a slow stream, whisking constantly. Cook for 1 full minute while whisking constantly, until thick.
  7. Off the heat, whisk in the 2 Tablespoons (28g) softened butter, the 6 ounces (170g) finely chopped bittersweet chocolate, 2 teaspoons espresso powder and 2 teaspoons vanilla. If there are small lumps of egg, strain the warm filling through a fine mesh sieve.
  8. Let the filling cool for 10 minutes, then spread it into the cooled crust. Cover tightly with plastic wrap and refrigerate for at least 4 to 6 hours, or overnight, until chilled and thick.
  9. Mix 1 teaspoon espresso powder with 1 teaspoon warm water in a small bowl and let it cool for a few minutes. Whip the 1 cup (240ml) cold heavy cream, 3 Tablespoons (22g) confectioners' sugar, 1 Tablespoon (6g) cocoa powder and the espresso mixture on medium-high speed until medium peaks form, about 3 minutes.
  10. Spread the whipped cream over the chilled pie and add any garnish. Slice and serve.
