Modak Recipe for Ganesh Chaturthi 2021
Ingredients
- Coconut · grated2 cups
- Jaggery1 cup
- Cardamom4
- Nutmeg · powder0.13 tsp
- Ghee3 tsp
- Rice flour1 cup
- Salt1 pinch
Instructions
- Heat 1 teaspoon ghee in a hot pan. Add the jaggery and coconut and sauté until they blend and the mixture thickens, without overcooking and with no excess moisture left in the pan.
- Stir in the cardamom powder and nutmeg, turn off the heat and let the filling cool completely.
- Bring 1 cup water to a rolling boil with the salt and 1 teaspoon ghee. Reduce to low, add the rice flour and mix well; the dough will look dry and crumbly.
- Turn off the heat, cover the pot and let the dough steam in the residual heat until it cools slightly.
- While still slightly warm, knead the dough until soft, smooth and crack-free, sprinkling in 2 to 3 tablespoons of hot or warm water as needed.
- Divide the dough into 11 equal balls and keep them covered with a damp cloth.
- Shape each modak by hand or in a greased mould: flatten a ball into a thin disc, pleat the edges, place 1 to 1½ tablespoons of filling in the centre, then gather and seal the pleats. With a mould, press the dough up the sides, add the filling and seal.
- Place the modak in a greased steam basket. Bring 1½ cups water to a rolling boil in a pot with a rack, set the basket inside, cover and steam on medium-high for 10 minutes, then turn off the heat and rest for 5 minutes.
- Cool the modak on a rack and finish with a few drops of ghee.
